Adulteration of inedible Amanitas in food containing wild mushroom was studied.

Polypeptide mushroom toxins were used as adulteration markers.

Phallotoxins and amanitins were measured by LC-MS/MS under ESI+ and ESI, respectively.

Basic LC gradient was used to suppress the signal of [M+Na]+ and increase that of [M+H]+ or [M−H].

The adulterants were found in the real samples.
