The EPS production begins in the exponential growth phase and increased in the stationary phase.
Lactose is the most efficient carbon source for EPS production followed by maltose.
The produced EPS is a heteropolymer with the average molecular weight of 8 × 104 Da.
The functional groups in the EPS were identified by FT-IR.
