Yersinia enterocolitica grows in food stored at low temperatures. The growth models of Y. enterocolitica in pasteurised milk stored at 8 °C and 24 °C were created. No difference in the growth of Y. enterocolitica in cow's and goat's milk was observed. The created models were used to calculate the time needed for Y. enterocolitica to reach a critical level. At 8 °C, the critical level of 4 log cfu of Y. enterocolitica per 150 ml was reached within 0.71 days, i. e. 17 h.
