摘要
白酒丢糟是传统固态发酵的下脚料,对其高值化利用具有重要的环境、社会和经济意义。论述了白酒丢糟综合利用的研究报道,并对食源性生物活性肽的特点、作用机制及研究现状进行了归纳和总结。
        Distiller's grains is the byproduct in traditional liquor solid fermentation. High-value utilization of distiller's grains would be significant for environment,society and economy. This paper reviewed the research progress in the reclamation of distiller's grains in recent years,and summarized the characteristics,function mechanism and the current situation of the actives peptide from food.
