摘要
采用高效液相色谱-串联质谱法对酱油中纳他霉素进行检测。以Kromasil 100-5C18柱3.9mm×150mm为色谱柱,以甲醇、10mmol/L乙酸铵为流动相。通过HPLC-MS/MS系统中全扫描模式对纳他霉素进行定性分析,多反应监测模式对其进行定量分析。结果表明:纳他霉素在0.025~1μg/mL内具有良好线性,检出限为5.14μg/kg,加标回收率均在79.4%~93.1%。结论:该方法操作方便、专属性强、灵敏度高、准确度高,可用于酱油中纳他霉素的检测。
Develop a detection method for natamycin in soy sauce using high performance liquid chromatographytandem mass spectrometry(HPLC-MS/MS).Use Kromasil 100-5 C_(18) column 3.9 mm×150 mm as the chromatographic column,and methanol,10 mmol/L ammonium acetate as the mobile phase.Qualitative analysis of natamycin is conducted under full-scan model,and quantitative analysis is conducted in the multiple reaction monitoring(MRM)model.The results show that the calibration curve for the analyte shows good linearity in the range of 0.025~1μg/mL.The limit of detection is 5.14μg/kg,and the recoveries obtained by standard addition method are in the range of 79.4%~93.1%.Conclution:This method is simple,with strong specificity,high accuracy and high sensitivity.It can be used for detecting natamycin added in soy sauce.
