摘要
为了探讨利用近红外透射光谱分析技术快速鉴别注胶肉的可行性,共制备了95个样品,其中60个注胶肉样品。利用FOSS公司生产的Foodscan型近红外肉类分析仪获取样本光谱,随机选取50个注胶肉样品和25个正常肉样品作为校正集,采用近红外光谱结合偏最小二乘法(PLS),建立注胶肉和正常肉判别模型。利用独立的预测集对预测模型进行了验证,结果表明所有验证样品均被正确判别,采用近红外透射光谱能快速无损的判别。
        The near infrared(NIR) transmittance spectroscopy was used, and gel-injected meat was identified quickly, and feasibility was studied, and 95 samples were prepared, in which 60 samples were gel-injected meat. Foodscan near infrared meat analyzer produced by FOSS company was used to obtain spectrum of samples, and 50 gel-injected meat samples and 25 normal meat samples were selected randomly as calibration set, and near infrared spectroscopy combined with partial least squares(PLS) were adopted, and discriminant model of gel-injected meat and normal meat was established. The independent set was used, and prediction model was verified. The result showed that all verified samples were distinguished correctly, and near infrared transmittance spectroscopy could distinguish quickly and perfectly.
