近红外光谱分析技术在酒醅常规指标检测上的应用

摘要
酒醅在窖池发酵环境中充当着物质循环、能量流动和信息传递的载体。固态发酵酒醅分析检验中存在的工作量大、耗时长、前处理麻烦、需要操作人员多、仪器或药品消耗大、不能及时指导生产等诸多问题。采用近红外光谱技术与偏最小二乘法相结合的手段,建立了酒醅常规指标的定标模型,水分绝对偏差≤1.00%、酸度绝对偏差≤0.10度、淀粉绝对偏差≤1.50。用近红外光谱分析技术建立的这些模型测量精确度完全能够满足实际生产需要,而且只需要2次光谱采集就能够完成多组分的定量工作,省却了传统分析方法繁琐的操作,节约了人力和时间、显著提高了工作效率和分析准确度。
        Fermented grains serve as the carrier of material circulation, energy flow and information transmission in the fermentation environment of the pit pond.There are many problems in the analysis and inspection of fermented fermented grains, such as large amount of work, long time, trouble in pretreatment, need of operation personnel, large consumption of instrument or medicine, and inability to instruct production in a timely manner.In this paper, using near infrared spectroscopy and partial least squares method, the calibration model of conventional indexin fermented grains is established, the absolute deviation of water is ≤1.00%, the absolute deviation of acidity is ≤0.10,and the absolute deviation of starch is ≤1.50.The measurement accuracy of these models established by near infrared spectroscopy can fully meet the actual production needs, and only need 2 times spectral acquisition can complete the quantitative work of multicomponent, save the traditional analysis methods cumbersome operation, saving manpower and time, significantly improve the efficiency and accuracy of analysis.
