摘要
多酚氧化酶(Ployphenol oxidase,PPO)是一类广泛分布于植物、动物、真菌等细胞内的铜结合金属蛋白酶,能够引起组织褐变,影响果蔬品质,造成减产。文章综述了PPO的相关研究进展,旨在为今后对马铃薯的PPO及其块茎褐变的研究提供基础参考。
