摘要
致病性弧菌具有嗜盐的特性,主要通过污染海产品而导致食源性疾病发生。近年来研究表明,淡水产品中致病性弧菌一直保持较高的污染率,在生产、贮运、流通以及餐饮环节均有侵染,并呈现上升趋势。为了了解淡水产品致病性弧菌的污染途径、追溯其来源,促进对其防控措施探索,本文针对我国淡水产品中致病性弧菌的污染现状进行综述,阐述弧菌的污染种类、水平及生物学特征,以期为更好防控淡水产品中致病性弧菌危害提供借鉴。
        Pathogenic Vibrio has the characteristics of halophilia and mainly causes foodborne diseases by contaminating seafood. In recent years, studies have shown that the pathogenic Vibrio bacteria in fresh water products has maintained a high pollution rate, and has been infected in the production, storage, transportation, circulation and catering links, and showed an increasing trend. In order to understand the pollution pathway of pathogenic Vibrio in freshwater products, trace its source, and promote the exploration of its prevention and control measures, this paper reviewed the pollution status of pathogenic Vibrio in freshwater products in China, described the pollution types, levels and biological characteristics of Vibrio bacteria, so as to provide references for better prevention and control of pathogenic Vibrio bacteria in freshwater products.
