摘要
食品生物化学是食品专业一门重要的专业基础课。该课程理论性强,知识点多,内容抽象,难以理解,且学生运用食品生物化学知识分析问题和解决问题的能力尚待提升。食品生物化学与食品化学课程内容有重复,教学效果不佳。本文根据食品生物化学课程的教学现状存在的难题,优化配置了食品生物化学和食品化学教学内容,完成了运用案例教学法培养学生分析问题和解决问题能力的教学改革探索与实践。
        Food Biochemistry is one of the important basic courses in food science major. However, the course is highly theoretical,containing many knowledge points and abstract contents, which are difficult to understand. Traditionally, the course of food biochemistry repeated some content of food chemistry, so that the teaching effect was not good, and the students were not good at analyzing problems and solving problems by using food biochemistry knowledge. Based on the problems existed in the current teaching situation of food biochemistry course, this paper provided some reasonable suggestions to optimize the teaching contents of food biochemistry and food chemistry, especially we got good results to use case teaching method to cultivate students' ability of analyzing and solving problems.
