摘要
为丰富我国寒冷地区果树栽培品种,选取毛樱桃作为试验材料,测定其成熟期单果重、纵横径、可滴定酸、类黄酮、总酚、花色苷的含量及抗氧化能力,并分析果实各性状之间、果实活性物质与抗氧化能力之间的相关性。结果表明:毛樱桃果实单果重为1.05g,可滴定酸含量为0.88%,类黄酮含量为3.40mg·g~(-1),总酚含量为1.63mg·g~(-1),花色苷含量为23.24mg·100g~(-1),清除DPPH自由基的能力较高且高于清除·OH自由基的能力。可滴定酸含量与总酚和花色苷的含量均呈极显著正相关性。类黄酮含量与清除·OH自由基的能力呈极显著正相关性,是清除·OH自由基最主要的活性物质。
        In order to enrich the cultivars of fruit trees in cold regions of China,this study selected Prunus tomentosa as experimental materials to determine the single fruit weight,vertical and horizontal diameter,titratable acid,flavonoids,total phenols,anthocyanins content and antioxidant capacity at maturity,and to analyze the correlation between fruit properties,active substances and antioxidant capacity.The results showed that the single fruit weight was 1.05 g,titratable acid content was 0.88%,flavonoid content was 3.40 mg·g~(-1),total phenol content was 1.63 mg·g~(-1),anthocyanin content was 23.24 mg·100 g~(-1).The ability of scavenging DPPH free radicals was higher than that of scavenging·OH free radicals.The titratable acid content was positively correlated with the total phenol and anthocyanin content.The content of flavonoids was positively correlated with the ability of scavenging·OH free radicals,and was the main active substance for scavenging·OH free radicals.
