摘要
选择体重100~110 kg的杜长大商品猪68头,进行了不同运输时间对猪肉质性状及血液生化指标的影响研究。结果表明:运输4 h的试验1组猪的肉大理石纹、24 h大理石纹、24 h a值、24 h b值均极显著高于运输2 h的试验2组猪的,2组猪的电导率极显著高于1组猪的;装运前及运输后采血,试验2组的血清丙二醛、皮质醇、肌酸激酶、白细胞介素-1β、肿瘤坏死因子、结合珠蛋白、去甲肾上腺素、多巴胺极显著或显著高于试验1组的;屠宰时采血,试验2组的血清丙二醛、白细胞介素-1β、肿瘤坏死因子、结合珠蛋白、去甲肾上腺素、肾上腺素极显著高于试验1组的,而试验1组的总抗氧化能力、皮质醇、促肾上腺皮质激素、多巴胺极显著或显著高于试验2组的。
        Sixty-eight heads of pigs with the body weight of 100 ~ 110 kg were selected,and the effects of different transportation time on the meat quality characters and blood biochemical indexes of these pigs were studied. The results showed that: the meat marbling score,24-h marbling score,24-h a-value and 24-h b-value of pigs in group 1( the transportation time of pigs was 4 h) were very significantly( P<0.01) higher than those in group 2( the transportation time of pigs was 2 h),while the meat conductivity of pigs in group 2 was very significantly( P<0.01) higher than that in group 1; for the blood sampled before or after the transportation,the malondialdehyde( MDA),cortisol( COR),creatine kinase( CK),interleukin-1β( IL-1β),tumor necrosis factor( TNF),haptoglobin( HPT),noradrenaline( NA) and dopamine( DA) of pigs in group 2 were significantly( P<0.05) or very significantly( P<0.01) higher than those in group 1; for the blood sampled in slaughter,the MDA,IL-1β,TNF,HPT,NA and epinephrine of pigs in group 2 were very significantly( P<0.01) higher than those in group 1,while the total antioxidant capacity,COR,corticotropin and DA of pigs in group 1 were significantly( P < 0. 05) or very significantly( P < 0. 01)higher than those in group 2.
