超临界CO_2中固定化脂肪酶催化鸡油水解的工艺研究

摘要
文章研究了超临界CO_2中固定化脂肪酶催化鸡油水解反应的效果。通过单因素实验考察了酶用量、温度、底物浓度、pH、搅拌转速对酶解率的影响,在此基础上采用响应面实验对温度、反应时间、酶量、搅拌转速工艺参数进行优化。实验结果表明:超临界CO_2中固定化脂肪酶催化鸡油水解的最佳条件为酶量0.45%、温度42.5℃、搅拌转速100 rpm、反应时间106.401 min,水解率为85.84%。
