<正>1概况食物过敏(food allergy)是指机体通过食入、皮肤接触或吸入某种食物蛋白而引起的特异性的免疫反应,从而导致机体过敏性炎症的一组疾病[1]。许多食物可以引起人体过敏,最常见的致敏食物有:牛奶、鸡蛋、花生、坚果、甲壳类和贝类、鱼、小麦和大豆。食物过敏在人群中的发病率报道不一[2],成人的发病率接近5%,儿童则可达8%,儿童食物过敏发生率明显高于成年人,我国重庆、珠海、杭州3城市0~2岁儿童食物过敏检出率相5.6%7.3%3
