摘要
两性淀粉是指在原淀粉分子链上接上阳离子和阴离子基团的复合变性淀粉,兼具天然淀粉、阳离子与阴离子淀粉所特有的优良理化特性,应用前景广阔。本文从两性淀粉的制备工艺、应用领域所涉及的反应或作用机理出发,综述两性淀粉的研究进展,为进一步优化两性淀粉的制备工艺,拓展其应用领域提供理论参考与应用指导。
        Amphoteric starch refered to a composite modi?ed starch with cationic and anionic groups attached to the molecular chains of raw starch.It had both excellent physical and chemical properties unique to natural starch,cationic and anionic starch,and had broad application prospects.Based on reaction or mechanism of action in the preparation process and application ?elds of amphoteric starch,the research progress of amphoteric starch was reviewed,which could provide theoretical reference and application guidance for further optimizing the preparation process of amphoteric starch and expanding its application ?elds.
