摘要
建立一种快速、无损分析肉中挥发性有机成分的顶空进样气相色谱-离子迁移谱联用方法,结合化学计量学方法构建快速分类模型以区分肉的种类。以牛肉、羊肉和鸡肉共59个样品为研究对象,称取约1 g待测肉样于标准瓶中,用磁帽密封,直接进行GC-IMS分析。结果表明,GC-IMS三维指纹谱可以有效表征不同肉类之间的气味差异信息,选取对应三维谱中26个特征峰的强度作为变量参数,用PCA方法对数据进行降维分析,并用LDA算法对样品进行分类。结果表明,采用前2个主成分能达到98.3%的正确率,仅有1个牛肉样品被误判成羊肉样品。以顶空进样气相色谱-离子迁移谱检测肉中挥发性成分,用PCA和LDA分析鉴别肉的种类具有可行性。
        A rapid and nondestructive headspace gas chromatography tandem ion mobility spectrometry(GC-IMS)method was established for the analysis of the volatile organic compounds in 3 kinds of meat.59 samples were taken as the research object with beef,chicken and lamb,about 1 g tested sample was put into the standard sample bottle and sealed with magnetic cap for direct GC-IMS detection and analysis.The results show that the sample information area of characteristic peaks of GC-IMS 3 D spectra corresponding to volatile organic substances can effectively characterize different types of meat,sectional intensity of area of the corresponding three-dimensional spectrum of 26 characteristic peaks were selected as variables.Principal component analysis(PCA) was used to reduce dimension of the selected variables of three kinds of meat and linear discrimination analysis(LDA) was further used to classify them.The accuracies of 98.3%were obtained by utilizing first two PCs and only 1 beef samples were misjudged as the lamb sample.GC-IMS is simple,rapid and nondestructive technology,and can be used for rapid identification of other food and agricultural products.
