摘要
采用气相色谱-质谱联用(GC-MS)的方法分析了花生酸化油的脂肪酸组成,并对其理化性质进行了研究,实验结果显示,花生酸化油的酸值(KOH)为83.45mg·g~(-1),碘值(I2)为97g·(100g)~(-1),皂化值为185.53mg·g~(-1),水分及挥发物含量为1.59%;主要脂肪酸为棕榈酸(14.65%)、硬脂酸(4.45%)、油酸(32.18%)和亚油酸(43.85%),其中不饱和脂肪酸的含量高达79.11%,具有较高的工业应用价值。
        Physicochemical properties ofpeanut acidified oil were as follow:Acid value(KOH)83.45 mg·g~(-1),iodine value(I2)97 g·(100 g)~(-1),saponification value(KOH)185.53 mg·g~(-1),content of water and volatile matter 1.59%.Thefatty acid composition of peanut acidified oil was also analyzed by gas chromatography mass spectrometry(GC-MS).Among determined fatty acids,linoleic acid(43.85%)and oleic acid(32.18%)were the highest,followed by palmitic acid(14.65%)and stearic acid(4.45%).The content of unsaturated fatty acid is 79.11%,which has high industrial application value.
