摘要
用当归、黄芪、甘草、山楂、陈皮等组成的中草药饲料添加剂,对试验组羔羊按日粮的3%、4%、5%添加,3次/d,试验期60d,试验结束后进行肉品质及风味化合物测定。结果表明:3个试验组羊肉的剪切力、脂肪含量、酯类物质、酮类物质、酸类化合物总相对含量低于对照组,而熟肉率高于对照组,由此说明日粮中添加中草药能够提高羊肉品质及风味。
The weanling lamb in experiment groups were fed three times daily with Chinese herbal medicine additive which consisted of ligusticum,milk veteh,glycyrrhiza,hawthorn and dried old orange peel during the period of 60 days.The amount of additive was 3%、4%、5% of diet.After the test,the mutton quality and aroma compounds had been mensurated.Results showed that lambs in three experiment groups had a lower shearing force,fat content,and total relative content of esters,ketones,and volatile fatty acids,and a higher cooked meat rate than that of the control group.In conclusion,dietary supplementing with Chinese herbal medicine could improve the quality and aroma compounds of mutton.
