醇类油脂与表面活性剂的界面共吸附行为及对泡沫性质的影响

摘要
泡沫在很多领域如日化、食品、采油等工业中有着广泛的应用,其中常伴随油相的使用,不可避免地对泡沫性质进而对使用效果产生影响。本文研究了两种含有共同官能团(羟基)但结构不同的香精油,芳樟醇和丁香酚,对十二烷基硫酸钠SDS泡沫性质的影响及相关机理,发现其影响泡沫的机制和程度与其增溶状态及界面吸附行为有关。采用振摇法、Foam Scan、流变仪等测定了加入不同浓度油相后表面活性剂溶液的起泡能力和稳定性、析液、表观粘弹性等泡沫性质,采用紫外、核磁共振、表面张力等实验技术和分子动力学模拟方法等研究了油相在胶束中的增溶状态和在泡沫液膜上的吸附行为。研究结果表明,两种油都与表面活性剂在界面共吸附,与油相处于增溶状态的溶胀胶束体系相比,乳化的油滴具有更明显的抑泡和消泡作用。两种油对于泡沫性质的不同影响,与它们不同的分子结构所导致的在界面的不同吸附行为有关。本文取得的认识可对相关工业领域中产品设计的油相选择及控泡技术提供指导。
Aqueous foam has been widely used in many industries,in which oil is often added and would inevitably affect foam properties,which are important for product quality.In this paper,the effect of two oils,linalool and eugenol,on SDS foam properties was investigated.Foam properties were measured by shaking method,Foam Scan,and rheometer.The solubilization and adsorption behavior were studied by experimental methods such as UV,HNMR,and surface tension meter combined with molecular dynamics simulation.It was found that both the two type of oils were easy to co-adsorb with surfactant at surface,and both of them showed larger defoaming ability as oil emulsions than being solubilized in swollen micelles.The different effects were found to be induced by their different interfacial adsorption behavior.Knowledge got in this study might be helpful for selection of oil in products designed for applications and investigation of foaming-controlling techniques.
