曲靖烟叶化学成分可用性及其对感官评吸质量的影响

摘要
运用模糊数学和主成分分析方法计算出代表烟叶质量状况的化学成分可用性指数(CCUI值),对曲靖烟叶化学成分可用性进行综合评价,分析了化学成分对感官评吸质量的影响。结果表明:①曲靖烟叶烟碱、钾、氯含量和氮碱比适中,总糖、还原糖含量和钾氯比、糖碱比偏高,总氮和淀粉含量稍低。②曲靖烟叶氯含量在等级间差异不显著,总氮含量在品种间差异不显著,氮碱比在品种间和产地间差异不显著,其余化学成分在等级、品种和产地间均存在显著或极显著差异;烟叶化学成分可用性等级间表现为:C3F>B2F>X2F,品种间为:K326>红大>中烟100>云烟85>云烟97>云烟87>NC102>NC297,产地间为:师宗县>罗平县>麒麟区>陆良县>宣威市>沾益县>会泽县>马龙县。③灰色关联分析表明,曲靖烟叶化学成分主要影响感官评吸质量评价指标中的灰色、燃烧性、劲头和香气质。
The chemical components usability of tobacco leaves in Qujing was comprehensively evaluated by chemical components usability index(CCUI value) which was calculated through fuzzy math and multivariate statistical analysis, and its influence to smoking quality was studied. The result indicated that: ①The average concentration of nicotine, potassium, chlorine and ratio of total nitrogen to nicotine were at an appropriate level while total sugar, reducing sugar, ratio of potassium to chlorine and ratio of total sugar to nicotine were high, and the content of nitrogen and starch were low. ②There was no significant difference in chlorine contents among different grades, total nitrogen contents among different varieties, ratio of total nitrogen to nicorine among different varieties and areas. But the difference of the other chemical components was significant or highly significant among different grades, varieties and areas. The chemical components usability in different grades was: C3F>B2F>X2F, in different varieties was: K326>Hongda>Zhongyan100>Yunyan 85 >Yunyan 97>Yunyan 87>NC102>NC297, in different areas was: Shizong>Luoping> Qilinqu>Luliang>Xuanwei>Zhanyi>Huizexian>Malong.③The chemical components of flue-cured tobacco leaves mainly influenced the smoking quality index of ash color, combustibility, impact and quality of aroma.
