比较环境因素及培养基质对副溶血性弧菌生长异质性研究

摘要
微生物生长变异在食品安全风险评估中起着重要作用,为比较环境因素及培养基质对副溶血性弧菌生长动力学差异,本研究应用Bioscreen.C全自动微生物生长曲线分析仪结合梯度稀释法对50株不同来源和不同基因型的副溶血性弧菌在不同温度30℃、37℃和不同纯培养条件APW、TSB(3%NaCl,pH8.0)下的最大比生长速率(μ_(max))进行了比较分析。结果证明菌株生长变异性随着生长条件温度和培养基质变化而变得更加明显。不同副溶血性弧菌最大比生长速率之间的差异随着温度的降低而增加,而在APW(3%NaCl,pH8.0)培养条件下副溶血性弧菌最大比生长速率高于其在TSB(3%NaCl,pH8.0)。本研究初步证实环境因素及培养基质对不同株副溶血性弧菌生长的差异,该结果可有助于菌株变异性预测微生物学和微生物风险评估。
Microbial growth variability plays an important role on food safety risk assessment,to compare the environmental factors and culture medium for Vibrio parahaemolyticus growth kinetics differences,In this study,the growth kinetic characteristics corresponding to maximum specific growth rate(μ_(max)) of 50 V.parahaemolyticus isolates from different sources and genotypes were evaluated at different culture in APW and TSB(3%NaCl,p H 8.0) at 30℃ and 37℃。 The results demonstrated that strain growth variability increased as the growth conditions became more stressful both interms of temperature and culture medium.The variability ofμ_(max) among different V.parahaemolyticus strains increased as temperature was decreased,however,under the APW(3%NaCl,pH8.0) culture conditions Vibrio parahaemolyticus maximum specific growth rate higher than that in TSB(3%NaCl,pH8.0) 。 This preliminary study confirms the different strains of V.parahaemolyticus growth differences in environmental factors and culture medium.The results emphasize the need to consider implications of strain variability for predictive modeling and risk assessment.
