摘要
维生素C和E可以有效地清除单线态氧和自由基,是应用广泛的天然抗氧化剂,两者联合作用时其抗氧化性取决于体系特性。本文利用电子顺磁共振技术(EPR),检测维生素C和维生素E在Brij30/液体石蜡/H_2O纳米乳液体系中清除自由基(1,1-二苯基-2-三硝基苯肼,DPPH)的能力。实验结果表明:在本研究体系中,维生素C和维生素E联合作用对自由基的清除能力明显强于单独作用的效果,这种协同作用有效地提高了抗氧化效果。
Vitamins C and E can efficiently scavenge singlet molecular oxygen and peroxy radicals.However,determination of the best antioxidants or their combination in a particular application is complex because antioxidants effectiveness depends on some properties of the system.The technique of electron paramagnetic resonance(EPR)was used in this study to assess the free radical(2,2-diphenyl-1-picrylhydrazyl,DPPH) scavenging capacity of vitamin C and vitamin E in nanoemulsion produced using nonionic surfactant Brij 30 and liquid paraffin using.The results suggest that the scavenging capacity of mixture vitamins was substantially superior to the sum of the individual effects(Fig.1) and these interactions can enhance the antioxidant effectiveness of natural antioxidants.
