顶空固相微萃取GC-MS联用测定竹叶青酒中的挥发性成分

摘要
采用固相微萃取和气质联用技术对竹叶青酒中的挥发性成分进行萃取及分析,并结合香气活性值(OAV)和香气贡献值(ROC)两个参数分析竹叶青酒的香气特征。结果显示,在竹叶青酒中一共检测到了38种挥发性组分,其中酯类18种,醇类6种,羰基类4种,烃类4种,酚类2种以及其他化合物2种,其中,酯类化合物浓度最高(431.2036mg/L),且酯类化合物的OAV值基本都大于1,ROC值也高达90.9749%。
A rapid and simple method was developed for determination of volatile compounds in Zhuyeqing liquor by head space solid-phase micro-extraction(HS-SPME) coupled with gas chromatography-mass spectrometry(GC-MS).At the same time,odor activity value(OAV) and relative odor contribution(ROC)were used to reflect the odor characteristics of Zhuyeqing liquor.In the experiment,thirty-eight volatile compounds were tentatively identified,including seven groups:esters(18),alcohols(6),carbonyl compound(such as aldehydes and ketones)(4),hydrocarbons(4),phenols(2),and other compounds(4).Among these,concentration of esters,which was 431.2036mg/L,was the highest.A large part of esters with OAVs>1,and ROC reached the percent of 90.9749.
