摘要
食品安全是直接关系到人民健康的重大民生问题,也是当前民众最关心的问题。近年来,我国食品安全事件层出不穷,其中,重金属及其他元素污染食物造成的食品安全事件也在不断增加。饮食中包含很多化学元素周期表中的元素,这些元素与食品安全息息相关,尤其是有毒有害的重金属元素对食品安全的影响最为严重。事实上,元素的形态及其在食品中的存在形式对于其毒性有很大的影响。因此,研究食品安全中的元素周期表十分重要。本文按照化学元素周期表的分类,全面分析了这些元素在食品中的来源及对人体的影响与危害,并总结了元素周期表中的规律对食品安全的影响,旨在为食品安全分析和监测提供参考。
        Food safety is a major livelihood issue directly related to people's health, and it is also the most concerned issue of the current public. In recent years, food safety incidents have emerged in endlessly in China.Among them, food safety incidents caused by contamination of heavy metals and other elements in food are also increasing. Diet contains many elements in the periodic table of chemical elements and these elements are closely related to food safety, especially toxic and harmful heavy metals, which have the most serious impact on food safety.Actually, the speciation and forms of elements in food have a great impact on their toxicity. Therefore, it is very important to study the periodic table of elements in food safety. According to the classification of periodic table of chemical elements, this paper comprehensively analyzed the sources of these elements in food and their effects and hazards on human body, and summarized the effects of regularities in periodic table of elements on food safety, in order to provide reference for food safety analysis and monitoring.
