摘要
研究板栗薏米营养方便米粥的配方及工艺参数。经单因素试验,得到最佳配方为板栗15.6%、薏米10.4%、红豆10.4%、大米52.2%(烘干状态下)、糯米粉8.3%、木糖醇3.1%;薏米和红豆浸泡温度50℃、浸泡时间90 min;蒸煮米水比例1∶3、蒸煮时间20min;干燥温度110℃。此条件下营养方便米粥品质最佳。
This paper studied the formula and technological parameters of nutritious rice porridge with chestnut and myotonin. The optimum formula was obtained by single factor test as follows: Chinese chestnut 15.6%, myotonin 10.4%, ormosia 10.4%, rice 52.2%(dried), glutinous rice flour 8.3%, xylitol 3.1%; Soaking temperature of myotonin and ormosia 50 ℃, soaking time 90 min; Ratio of rice and water in cooking 1∶3, cooking time 20 min, drying temperature 110 ℃. Under these conditions, the quality of nutritious and convenient rice porridge is the best.
