Production of vanillin from sugar beet pulp was performed by lignin oxidation. The quantity of vanillin was determined by HPLC method. The effect of reaction parameters on vanillin concentration was evaluated. Vanillin was separated by crystallization process. The crystals was approved as a vanillin component by HPLC, FT-IR, H NMR, GC/MS and DSC.
