Micromonospora chaiyaphumensis S103 is producing five major extracellular proteases. The optimum pH and temperature for proteolytic activity were 8 and 70 °C. M. chaiyaphumensis proteases were found to be effective in the deproteinization of shrimp waste. The crude protease showed excellent compatibility with various commercial detergents and high stability in organic solvents.
