Pseudozyma hubeiensis was newly isolated from digestive juices of Nepenthes alata. P. hubeiensis produced extracellular aminopeptidase but proteinase was not detected. The aminopeptidase was purified to a single protein with molecular mass 75.3 kDa. The aminopeptidase reduced the bitterness of peptides generated from milk casein.
