First characterisation of free and glycosylated simple phenolic compounds in cocoa. 60 international samples of Forastero beans were studied by on-line SPE-UHPLC-HRMS. Targeted (N = 62) and untargeted (N = 79) profile of free and glycosylated simple phenols. Tentative identification of hexoside, pentoside and disaccharidic derivatives.
