Drug delivery systems with levan and its carboxymethylated form are produced. The effect of pH and the ionic strength on nanoparticles aggregation is studied. Basic pHs provides the best results because promotes repulsion forces. Drug release percentage depends on pH preparation and the fructose polymer.
