Microbiological load and contaminants in deep-frozen octopus meet legal limits. Products (92%) showed significantly higher moisture level than unprocessed octopus. Cooking losses were higher in commercial products than in unprocessed samples. Overall unconformities accounted in 80% of the total samples. Producers have misleading practices that defraud consumer's expectations.
