Dietary fiber concentrates (DFCs) were produced from papaya pulp and peel. DFCs were composed mainly by insoluble and soluble dietary fiber. Phenolics, carotenoids and ascorbic acid were also present on papaya DFCs. Polyphenols associated to DFCs were 65% bioaccessible in the small intestine.
