A Nanofiltration process of GOS using three-stage serial units was designed. An enzymatic pre-hydrolysis step was also tested to facilitate lactose remotion. An empirical model showed that TMPc must be decreased with time to reduce fouling. GOS solutions with lactose hydrolysis improved the flux but reduced GOS retention. After 3 sequential batches, similar purities to that of commercial products were obtained.
