Both endophytic bacteria and fungi are excellent exopolysaccharide (EPS) producers. EPS play important physiological roles in plant-endophyte interactions. EPS production is influenced by media components and cultivation conditions. EPS are linear homopolysaccharides or highly branched heteropolysaccharides. EPS exhibit antioxidant, antitumor, anti-inflammatory and anti-allergic activities.
