Advancements in LC analysis of fat-soluble vitamins have been illustrated. Recent techniques for extracting fat-soluble vitamins from foods have been set out. Fundamentals, advantages and shortcomings of each technique have been discussed. Latest applications for the vitamin characterization of foods have been presented. Future trends on the fat-soluble vitamin analysis in foods have been identified.
