Pectinolytic enzyme and different filter aids were used to clarify date syrup. RSM was effectively used to optimize date syrup clarification process variables. BET was used to study of specific surface area and bulk density of filter aids. FTIR was used to determine colored compounds in raw and clarified date syrups. At obtained optimum conditions, the studied responses were drastically decreased.
