Mango powder was produced by spray drying and cast-tape drying. Cast-tape drying can be used for drying sticking high sugar content materials. Cast-tape drying can be used for drying whole fruit pulp, with high content of fibers. Spray dried powder presented higher carotenoid concentration than cast-tape powder. Cast-tape drying has high evaporative capacity and can compete with spray-drying.
