PLC-Y is a novel enzyme for oil degumming. PLC-Y production in Pichia pastoris was optimized by strain engineering. Attenuated AOX1 promoter variant for HAC1 expression improved PLC-Y production titers. Using a fed batch fermentation process, 4.5 g/l of active PLC-Y enzyme is obtained. A manufacturing process for the cost effective production of this enzyme is achieved.
