Curcumin-loaded octenylsuccinated corn dextrin micelles were spray-dried. Spray-dried micelles appeared like unaerated balls. Maltodextrin favored curcumin retention in spray-drying process. Maltodextrin highly improved curcumin stability in redissolved micelle. Curcumin in redissolved micelle was more resistant to freeze–thaw and acid than heat.
