Sinergistic Interactions between lecithin and GMS were found in O/W emulsions. Mixture with the same lecithin/GMS ratio did produce the most stable emulsions. Lecithin dominated adsorption kinetics and rheological properties. GMS dominated the flow behavior of mixed emulsions.
