Aflatoxin B₁ is a natural fungal contaminant common in a large variety of agricultural products and foods. Ozone due to its safety, environment-friendly, low cost, high efficiency in decomposing aflatoxin B₁, has been widely studied and used in the food industry. The ozonolysis mechanism of aflatoxin B₁ and the factors influencing its degradation efficiency have been the focal points to be studied. This paper reviews the new research development in ozonolysis mechanism, summarizes the factors influencing the ozonolysis efficiency of aflatoxin B₁ in foods, and provides the corresponding measures to improve the ozonolysis efficiency of aflatoxin B₁.
