Most food handlers are female high school graduates older than 36 years of age. Most food service facilities do not practice the hazard analysis and critical control points (HACCP) programme. The vast majority of the NSNP food handlers have no knowledge of HACCP. Food handlers are deficient in their knowledge, awareness and attitude on important microbial food safety hazards.
