Enzymatic hydrolysates of plant proteins showed an excellent ACE-inhibitory activity. Tryptophan- tyrosine- and phenylalanine-containing dipeptides could be identified. The dipeptides IY, VY, IW and VW substantially contributed to the ACE-inhibitory activity.
