Salmonella enterica was isolated from ≥ 87% of pig carcasses after bleeding. Salmonella strains were carried through the pork processing stages on carcasses. S. enterica was not detected on retail pork products from the processing plant. S. enterica serovar Derby was the most common serotype (Plant A, 23%; plant B, 61%).
