Gaseous AITC (10 µL/L) avoids aflatoxin production by Aspergillus parasiticus and enniatins/beauvericin by Fusarium poae in wheat flour.

AITC could be used as a natural preservative in intelligent packaging to improve food safety of flours.

Final concentration of AITC in flours may not influence the flavor of products elaborated with them.
