Effects of metal ions on the interaction between EGCg and β-Lg were investigated. Cu2+ increases the quenching efficiency of EGCg to β-Lg by more than EGCg alone. Mn2+, Al3+, Zn2+ and Sn2+ obviously decreased the binding affinity of EGCg to β-Lg. [β-Lg-Cu] significantly increased the affinity of EGCg binding to β-Lg by 115.44%. [β-Lg-Cu] and [β-Lg-Al] interaction results in unfolding of the structure of β-Lg.
