We assessed food safety knowledge of handlers, chefs and managers in restaurants. Knowledge about the steps used in handwashing was unsatisfactory by most handlers. Nutritionist influenced positively the participation of the handlers in training. Knowledge of chefs and managers was unsatisfactory. Results point the need for a better qualification of the handlers, chefs and managers.
