Antioxidant activities of lipase-catalyzed alkyl esters in ionic liquid was studied. Ionic liquids (ILs) with a [Tf2N]-base produced the highest esterification efficiency. Alkyl dihydrocaffeates showed strong ability to scavenge free radicals. Alkyl dihydrocaffeate with long chain length inhibited oxidation more than the short chain ones.
