Blends of soybean oil and fully hydrogenated soybean oil were interesterified by means of two sn-1,3 specific lipases.

The effect of different reaction variables over acyl migration was studied.

Lipozyme TL IM was proven to enhance acyl migration compared to Lipozyme RM IM.

An increase in immobilized enzyme concentration promoted the acyl migration reaction.

Unsaturated acyl moieties migrated faster defining a higher [1,3-DAG] at equilibrium.
