Acoustic assisted treatments have been applied on pineapples before drying. Acoustic energy promoted an increment of vitamins B and malic acid. Vitamin C and citric acid decreased after acoustic assisted treatments. Acoustic energy allowed a better preservation of the quality in dried samples. The water effective diffusion coefficient was affected by the acoustic energy.
